I love bliss balls. I love cashews. I love coconut. I love blueberries …. So needless to say I love this recipe!!
Having little ones means life is often in fast forward, so an easy way to prepare this and any bliss ball recipe is the cheats method of using a tin and pressing the mixture in there to set. You can then eat them as squares instead. Another cheat that I like, and that looks cute too, is using mini muffin trays with the liners – great for parties and for little treats for tiny hands!
My recipe below is based on a recipe from Wholefood Simply – I didn’t have all of her ingredients so just went with the flow and this is what came out!
1 cup blueberries (I like to use frozen but you can use fresh blueberries)
¼ cup raw cashews
2 cups desiccated coconut
½ teaspoon of natural vanilla extract
10 medjool dates (with the seeds removed)
100g of dark chocolate (at least 70% cocoa)
Place all of the ingredients except for the dark chocolate into a food processor and blitz until smooth.
Firmly press this into a lined rectangular tin and place into the fridge to set for an hour.
Melt the dark chocolate and drizzle over the set slice and place back into the fridge again for about another hour until set.
Cut into squares and enjoy!
This needs to be kept in the fridge and will last about a week.
