Blueberry Coconut Cream Gummie Recipe

When we want to support the gut 'food as medicine' is a great way to start doing this - and I love using gelatin. It's a complete protein source which provides essential amino acids necessary for tissue building and repair - including repairing the mucosal lining of the gut.

I love gummies as part of my gut health routine - my normal approach is one flavour to keep it nice and simple but I thought I would give a dual layer gummie a go and not only does it look great, is great for your tummy but it's pretty tasty too!

I have used frozen blueberries here but you can try this with raspberries, blackberries and even strawberries. Just taste the mixture before adding in the gelatin to see that you like the flavour and that it doesn't need more maple syrup to give it a little sweetness.

I have added to the gut healing in this recipe with the inclusion of probiotics powder to the coconut cream layer.


  • 1 cup frozen blueberries

  • 2 cups of water

  • 1 tablespoon of maple syrup

  • 250ml coconut cream

  • 3 teaspoons of probiotic powder

  • 1/2 cup of NutraOrganics gelatin powder

Blueberry Layer Method:

  1. Put the half the gelatin (1/4 of a cup) into a small bowl, mix in 1/2 cup of water with a fork and let it "bloom" for 5 minutes

  2. Whilst the gelatin is blooming place the frozen blueberries, 1 cup of the water and maple syrup to a small saucepan on the hot plate. Bring to a simmer for a few minutes, just long enough for the frozen blueberries to soften and the liquid to warm up.

  3. Blitz this mixture either with a handheld blender, blender or with a fork. To make the liquid less textured strain through a sieve into a glass measuring jug to get any "bits" out and to make sure you have 250ml of liquid left.

  4. Put this liquid back into the saucepan and make sure its warm enough to dissolve the gelatin.

  5. Cut up the bloomed gelatin into squares (it makes it easier to dissolve) and put into the blueberry mixture, whisk until the gelatin is dissolved.

  6. If you are using moulds fill each up to half with the blueberry mixture or use a Tupperware container and pour the mixture.

  7. Place in the fridge for 1 hour or until set.

Coconut Cream Layer Method:

  1. Bloom the remaining gelatin as per the method above (1/4 cup of gelatin and 1/2 cup of water).

  2. Whilst the gelatin is blooming place the coconut cream into a small saucepan on the hot plate and warm so its hot enough to dissolve the gelatin (not to the point of boiling or simmering).

  3. Add the probiotic powder and whisk until combined.

  4. Again cut up the bloomed gelatin into squares and put into the coconut cream mixture, whisk until the gelatin is dissolved.

  5. Pour this coconut cream mixture on top of your blueberry mixture (either in the moulds or Tupperware container).

  6. Place in the fridge for 1 hour or until set.
